I had a taste for something sweet, as usual. I didn't want to go to the grocery store so I whipped up a few things I already had in the kitchen. It's a simple sweet potato custard. Here's the step by step instructions.
Crust:
1 cup brown sugar
1 cup chopped nuts (preferably pecans)
1/3 cup of flour
1/4 cup of butter (melted)
Filling:
3 cup mashed sweet potatoes
1 cup sugar
1 tsp vanilla
1/2 tsp salt
1/4 cup cinnamon
1/3 cup nutmeg
2 eggs (well beaten)
1/2 cup butter (melted)
Instructions:
Preheat oven 350 degrees. Mix sweet potatoes, salt, sugar, cinnamon, nutmeg, eggs and butter in a large bowl. Mix thoroughly. Pour mixture in buttered baking pan. Combine brown sugar, chopped nuts, flour and butter in bowl. Sprinkle the surface of the sweet potato mixture evenly with the crust mixture. Bake for 30 minutes. Allow custard to cool for at least 20 minutes before serving.
