If you didn't already know, I'm a southern girl and I love to eat. lol I found this recipe on a website and of course made it my own. I took some things out added a few things but my kids LOVED it... And they are extremely picky eaters... Here are the instructions.
Ingredients:
1lb skinless, boneless chicken breast, cut into small pieces
1lb of smocked sausage, sliced
1 can of diced tomatoes with juice
1 large onion, chopped
1 large green bell pepper, chopped
1 cup chopped celery
1 cup chicken broth
2 tsp dried oregano
2 tsp dried parsley
2 tsp Cajun seasoning
1 tsp cayenne pepper
1/2 dried thyme
1 cup rice
Instructions:
Place ALL ingredients except rice in slow cooker. Cook on low for 7-8 hours or high for 3-4 hours.
Cook rice according to instructions. Add rice, as desired, to each individual serving of Jambalya. Store rice separately from stew.
